Reduce the amount of water artificially added to meat
A lot of meat bought from supermarkets and wholesalers contains a large percentage of water, artificially added just before packaging.
On cooking, this seeps out in the form of a cloudy residue which is quite unappetising. It possibly even prevents fried meat from achieving a higher cooking temperature.
The suppliers claim this is done "as an aid to cooking" but this is clearly nonsense - it is done to increase the weight and volume so they can charge more. The legal maximum proportion of added water should be drastically reduced.
