The Government e-Petitions Team gave the following reason:

In 2020, the May bank holiday was moved to commemorate the end of the war in Europe (Victory in Europe day). We understand that you'd like something different to happen in future to celebrate co-operation among Europeans, but we're not sure what you would like the UK Government and Parliament to do.

You could start a new petition that clearly asked for the UK Government and Parliament to take a specific action. For example, you could ask the UK Government and Parliament to create a bank holiday to celebrate European co-operation, if that's what you'd like to happen.
